Lemon Treats

Ingredients

  • 16 oz bag of mini marshmallows, divided
  • 6 Tbsp butter
  • 2 Tbsp lemon juice
  • 2 tsp lemon extract
  • 6 cups rice crispy cereal
  • 2 tsp lemon zest
  • ½ cup white chocolate melts
  • Yellow food coloring

Instructions

  1. Prepare a 9×13 baking pan by spraying it with cooking spray or lining it with parchment paper. Set aside.
  2. In a large sauce pan, melt the butter over medium low heat, stirring frequently.
  3. Measure out 1 cup of mini marshmallows and set aside.
  4. Add the rest of the marshmallows in with the butter and stir frequently until melted.
  5. Once melted, take off heat and add in the lemon juice, lemon zest, and lemon extract and stir to combine.
  6. Stir in remaining 1 cup of marshmallows and cereal.
  7. Once all combined, transfer it to the 9×13 inch baking pan and press down gently to create an even surface.
  8. In a microwave safe bowl, microwave the candy melts for 15 seconds. Remove and stir.
  9. Continue to melt in increments of 15 seconds until fully melted.
  10. Stir in food coloring.
  11. Drizzle over the rice krispie treats using a fork or piping bag.
  12. Let your rice krispies treats cool down in the refrigerator for 1 hour or until set.
  13. Slice and serve.

Margarita Treats

Ingredients

  • 6 cups Rice Krispies cereal
  • 2 tsp lime zest
  • 2 Tbsp tequila- or more to taste,
  • up to 4 Tbsp ½ cup unmelted white candy melts
  • Green food coloring
  • Course salt

  2. In a large sauce pan, melt the butter over medium low heat, stirring frequently.
